Born from Embers
Our chef grew up in Yucatán, traveled the world to sharpen his craft, and came back. To carry forward what his father taught him: the art of pibil, the slow patience of pork belly, the ritual of oven-roasted lechón. What you taste at ALÚ is that conversation, between where he went and where he’s always been.

Rooted in Memory
An Architectural Jewel in the Heart of the Hacienda
ALÚ lives inside the restored casco of Hacienda Xtojil, a building that once stood at the center of Yucatán’s “green gold” era. We preserved its bones and reimagined it with glass: a luminous, open space where the henequén fields pour in through every wall and the sky is always part of the meal. Tradition and today sit at the same table here. The open kitchen is the stage. The fire is always visible. And the shared table, long, warm, and full, is the whole reason you came.
Seasonal & Local
Caribbean lobster, chaya, local beet, regional squash, and pork, sourced from our garden and allied ranches. The menu changes with the land, because the land always knows best.

Dishes here are made to be passed around. The table is a gathering place. Eat slowly. Talk more. That’s the whole point.
Conscience & Care
Organic vegetables, clean proteins, zero-waste sourcing. We support local partners and honor the ecological limits of this land. Good food should never cost the earth.
